On my previous host through cPanel I was able to easily download an entire backup of my files... other than logging onto a webftp or FTP client and download it that way (which through an FTP client takes like hours), how can I do this?

Hey, another question, could I use rsync to upload the files to the server from my computer, or no? Sorry if it's stupid :(

Yep. With the proper syntax, you can update your site via rsync.
