...How do i change name servers for a domain that I REGISTERED W/ DREAMHOST to another name server ? Internic has no "record" of the domain name ... and I can't change it w/ them ...

you can also do it from the domains > manage area of the panel.
click the [edit] link to the right of the "domain registration" service!
