I am making a sub account of my domain for a friend of mine as she needs hosting. I want to give her private FTP access but I've searched and searched and explored the Cpanel and I can't find a way to do this!

Isn't there a way where I can just set up the FTP in one click on the cpanel? (e.g. create a folder and an automatic FTP address is created?).

Don't know about one-click, but this "How do I share website access with another FTP user?" has a relevant section on "If you want to give access to just one sub-directory of your website:".
