Rails App and Backups

Hey guys, I got a couple of backup questions:
Is the DH's domain restore function is smart enough to backup the entire Rails app folder, and not just the "public" folder in it?
Also, can anyone please recommend a good shell script (or tutorial) that I can run as cron job to backup my domains to my DH's personal backup account? Preferably one that can keep multiple copies.
