Google host everything EXCEPT email?

Hi.
I want to host everything except email at Google (and I want mydomain.org to point to a Google Site). It seems like there is no built-in way to do this. If you switch to Google hosting, it switches email there too.
So, it seems like I could write down the MX records that DreamHost assigns me for email, switch to Google hosting, and then manually edit the MX records to switch email back to DreamHost.
Does this seem like the right way to go?
