I'm new to Dreamhost and Rails. There are instructions for using fastcgi and for using Passenger. If one uses passenger, should the fastcgi box be ticked, or just the passenger box?

Passenger and FastCGI are completely independent of each other. If you're using Passenger you only need to have Passenger enabled.
