How to reload a wiki?

I'm in the process of transferring a wiki to DreamHost from another hosting service and am looking for advice on updating or replacing the test transfer.
Heres the background for my question. I installed MediaWiki on my account at DreamHost, then used an XML dump of the original wiki to transfer the data to the DreamHost wiki. ( I edited the XML slightly to facilitate the transfer.) That worked without a hitch. I then loaded the FCKeditor extension we're used to at the old wiki and confirmed that everything looked good to go. Meanwhile, we continued to work on the content of the wiki at the old site. Now that I'm sure we can work on our wiki at DreamHost, I need to replace the data that's at DreamHost with the latest and greatest from the old site. Then we'll turn off the old wiki and only update at DreamHost.
Thus, my question is this: How do I do a SECOND transfer of data? Delete the installation of MediaWiki at DreamHost and reinstall? Do the XML transfer assuming MediaWiki can sort out what to replace? Delete the content of the wiki's MySQL database and then do the XML transfer? Or ....?
