I'm a WP user having big troubles (specifically with plugins) since the PHP 5.2.1 upgrade.
Is it possible to go *back* to an earlier version of PHP? How is that done?

You can roll back to PHP4. Check DH panel --> Domains --> Manage Domains --> Web Hosting --> Edit.
If you want to roll back older version of PHP5, I think you have to install by yourself. You can refer to this article http://wiki.dreamhost.com/index.php/Installing_PHP5. If you are confident to intall by yourself, you can try that.

I just couldn't seem to find that part of the Control Panel. Thanks for the hand-holding!

I assume you already have an account in DH.
You can use your email adress or WebID to log into DH panel via http://panel.dreamhost.com
You can then manage basically everything for your website :P
