I have been serving a fully hosted domain for years.
If I change the type of domain from fully hosted to mirrored or redirected, I lost all the data in the domain directory?

I've switched around before and didn't lose the directory -- but I don't know if that's guaranteed or not, so I'd probably make a backup first just to be safe.
You should really have your own backups anyway, just in case anything ever goes wrong.

And should one accidentally change/delete a fully hosted domain, there's still the snapshot directory for emergency recovery:
